"Ingredients:

- 1 cup quinoa

- 2 cups water

- 1 avocado, sliced

- 1 cup cherry tomatoes, halved

- 1 cup chickpeas, roasted

- 1/2 cup cucumber, diced

- 1/4 cup red onion, thinly sliced

- 1/4 cup fresh parsley, chopped

- Salt and pepper to taste

- Lemon tahini dressing


Directions:

1. Rinse quinoa under cold water and cook according to package instructions.

2. In a large bowl, combine cooked quinoa, avocado, cherry tomatoes, chickpeas, cucumber, red onion, and parsley.
