"Ingredients:

- 1 1/2 cups all-purpose flour

- 1/2 cup sugar

- 2 tsp baking powder

- 1/4 tsp salt

- 1/2 cup non-dairy milk

- 1/4 cup lemon juice

- 1/4 cup vegetable oil

- 2 tbsp poppy seeds

- Zest of 1 lemon


Directions:

1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.

2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.

3. In a separate bowl, whisk together non-dairy milk, lemon juice, and vegetable oil.

4. Pour wet ingredients into dry ingredients and mix until just combined.

5. Fold in poppy seeds and lemon zest.

6. Divide batter evenly among muffin cups and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
