"Ingredients:
- 1 can of chickpeas
- 1 large sweet potato, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 2 cups of vegetable broth
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- Olive oil for cooking
Directions:
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until fragrant.
3. Add sweet potato, chickpeas, diced tomatoes, vegetable broth, cumin, paprika, cayenne pepper, salt, and pepper.
4. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until sweet potatoes are tender.
