"Ingredients:

- 1 cup quinoa

- 2 cups water

- 1 red bell pepper, chopped

- 1 zucchini, chopped

- 1 yellow squash, chopped

- 1 red onion, sliced

- 2 tbsp olive oil

- Salt and pepper to taste

- 1/4 cup balsamic vinegar

- 2 tbsp honey

- 1/4 cup fresh parsley, chopped


Directions:

1. Preheat oven to 400°F (200°C).

2. In a large bowl, toss chopped vegetables with olive oil, salt, and pepper.

3. Spread vegetables on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and slightly browned.

4. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until water is absorbed.

5. In a small bowl, whisk together balsamic vinegar, honey, and a pinch of salt.

6. In a large bowl, combine cooked quinoa, roasted vegetables, and balsamic dressing. Mix well.

7. Garnish with fresh parsley before serving.
