"Ingredients: 

- 1 cup dried lentils 

- 1 onion, chopped 

- 2 cloves garlic, minced 

- 1 inch ginger, grated 

- 1 can diced tomatoes 

- 1 can coconut milk 

- 2 tbsp curry powder 

- 1 tsp turmeric 

- 1 tsp cayenne pepper 

- Salt and pepper to taste 

- Fresh cilantro for garnish 


Directions: 

1. Rinse lentils and cook according to package instructions. 

2. In a large pot, sauté onion, garlic, and ginger until fragrant. 

3. Add diced tomatoes, coconut milk, and spices. 

4. Stir in cooked lentils and let simmer for 15-20 minutes. 

5. Season with salt and pepper. 

6. Serve hot, garnished with fresh cilantro. Enjoy!
