"Ingredients:
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Cook quinoa according to package instructions and let it cool.
2. In a large bowl, combine quinoa, black beans, red bell pepper, red onion, avocado, and cilantro.
3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
4. Pour dressing over quinoa mixture and toss to combine.
5. Serve immediately or refrigerate until ready to serve.
