"Ingredients:

- 1/4 cup chia seeds

- 1 cup almond milk (unsweetened)

- 1 tablespoon honey or maple syrup (optional)

- A pinch of salt

- 1/2 teaspoon vanilla extract

- Mixed berries (strawberries, blueberries, raspberries)

- 1 banana, sliced

- Handful of granola

- A sprinkle of coconut flakes


Directions:


1. In a bowl or mason jar, mix together chia seeds, almond milk, honey/maple syrup, salt, and vanilla extract. Once the ingredients are well combined, let it sit for 5 minutes, give it another stir to break up any clumps of chia seeds, cover and put the mixture in the fridge to set for 1-2 hours or overnight.


2. The chia pudding should be nice and thick, not liquidy. If it's not thick enough, add more chia seeds, stir and refrigerate for another 30 minutes or so.


3. When ready to serve, alternate layers of chia pudding, mixed berries, banana slices, and granola into a glass or jar. Repeat the layers until all of the ingredients are used up.


4. Top the parfait with a sprinkle of coconut flakes for added texture and flavor.
