- 1 cup butter, softened

- 1 1/2 cups packed brown sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 3 cups quick-cooking oats

- 1 1/2 cups all-purpose flour

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1 teaspoon cinnamon


Directions:


1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. 

3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. In another bowl, combine the oats, flour, baking soda, salt, and cinnamon. Gradually add this to the creamed mixture and mix well.

5. Drop by rounded tablespoonfuls onto the prepared baking sheets. 

6. Bake for 10-12 minutes or until the edges are lightly browned. 

7. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.


Cooking Time: Prep time is approximately 15 minutes, and cooking time is 10-12 minutes per batch.
