"Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 red onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley
Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
3. Meanwhile, spread the diced bell peppers, zucchini, and red onion on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly charred.
4. In a large bowl, combine the cooked quinoa, roasted vegetables, feta cheese, lemon juice, and chopped parsley. Mix well to combine.
5. Serve the quinoa salad warm or cold, as desired.
