"Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse quinoa under cold water in a fine mesh strainer. In a medium saucepan, bring 2 cups of water and quinoa to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is tender and water is absorbed. Fluff with a fork and let cool.
2. In a large mixing bowl, combine cooked quinoa, cucumber, bell peppers, red onion, cherry tomatoes, feta cheese, and parsley.
3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss to combine.
4. Serve chilled or at room temperature.
