"Ingredients:

- 1 cup quinoa

- 2 cups water

- 1 cucumber, diced

- 1 red bell pepper, diced

- 1 yellow bell pepper, diced

- 1/2 red onion, finely chopped

- 1/4 cup fresh parsley, chopped

- Juice of 2 lemons

- 1/4 cup olive oil

- Salt and pepper to taste


Instructions:

1. Rinse the quinoa under cold water. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit for 5 minutes. Fluff with a fork and let cool.

2. In a large bowl, combine the cooked quinoa, cucumber, bell peppers, red onion, and parsley.

3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to combine.

4. Serve chilled or at room temperature.
