"Ingredients:
- 4 salmon fillets
- 1 cup quinoa
- 2 cups water
- 2 cups fresh spinach
- 1 red bell pepper, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions:
1. Preheat grill to medium-high heat.
2. Season salmon fillets with salt and pepper.
3. Place salmon fillets on grill and cook for 4-5 minutes per side, or until salmon is cooked through.
4. In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, and simmer for 15 minutes, or until quinoa is cooked and water is absorbed.
5. In a large bowl, combine cooked quinoa, spinach, red bell pepper, feta cheese, and balsamic vinaigrette. Toss to combine.
6. Serve grilled salmon on top of quinoa and spinach salad.
7. Enjoy!
