- 2 boneless, skinless chicken breasts

Instructions:
1. Cut the chicken breasts into bite-sized pieces.
2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
3. Add the chicken to the skillet and cook until browned and cooked through.
4. Add the bell pepper, onion, and broccoli to the skillet and cook until slightly softened.
5. In a small bowl, whisk together the soy sauce, garlic, ginger, cornstarch, water, salt, and pepper.
6. Pour the sauce over the chicken and vegetables in the skillet.
7. Cook, stirring frequently, until the sauce has thickened and everything is well coated.
