"Ingredients:
For the Quinoa Salad:
1. 1 cup quinoa
2. 2 cups water
3. 1/4 cup diced red onion
4. 1/2 cup diced cucumber
5. 1/2 cup diced bell pepper
6. 1/2 cup diced tomatoes
7. 1/2 cup chickpeas
8. 1/4 cup diced olives
9. 1/4 cup crumbled feta cheese
For the Lemon Herb Dressing:
1. 1/4 cup olive oil
2. 2 tablespoons freshly squeezed lemon juice
3. 1 teaspoon honey
4. 2 cloves garlic, minced
5. 1 tablespoon chopped fresh basil
6. 1 tablespoon chopped fresh parsley
7. Salt and pepper to taste
Directions:
1. Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover and simmer until quinoa is tender and has absorbed the water, about 15 minutes. Let it cool.
2. While the quinoa is cooking, prepare the lemon herb dressing by whisking together olive oil, lemon juice, honey, minced garlic, chopped basil and parsley in a small bowl. Season with salt and pepper to taste.
3. In a large bowl, combine the cooled quinoa, red onion, cucumber, bell pepper, tomatoes, chickpeas, olives, and feta cheese.
4. Pour the dressing over the salad ingredients and toss to combine.
5. Serve immediately, or refrigerate for an hour to allow the flavors to meld together.
