"Ingredients for Salad:
- 1 cup quinoa
- 2 cups water
- 1/4 cup red onion, diced
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, sliced

- 1/4 cup parsley, chopped
- 1/4 cup mint, chopped
Ingredients for Lemon Herb Dressing:
- Juice of 2 lemons
- 1/2 cup extra virgin olive oil
- 2 tablespoons honey
- 1 garlic clove, minced
- Salt and pepper to taste
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
Directions:
1. Rinse the quinoa under cold water until the water runs clear. Place the quinoa and the 2 cups of water in a medium saucepan and bring to a boil. Reduce heat to low, cover and let simmer for 15 minutes or until all the water is absorbed and the quinoa is tender. Remove from heat and let it cool.
2. In a large salad bowl, combine the cooled quinoa, red onion, cucumber, cherry tomatoes, kalamata olives, feta cheese, parsley, and mint. Stir until well mixed.
3. To make the dressing, whisk together the lemon juice, olive oil, honey, minced garlic, salt, pepper, basil, and parsley in a small bowl.
4. Drizzle the dressing over the salad and toss to combine. You can serve the salad immediately or refrigerate it for a couple of hours to let the flavors meld together.
