"Ingredients:
- 6 large egg yolks
- 3/4 cup granulated sugar
- 8 ounces mascarpone cheese
- 1 cup heavy cream
- 1 1/2 cups strong brewed espresso, cooled
- 2 tablespoons rum or coffee liqueur
- 24-30 ladyfinger cookies
- Cocoa powder, for dusting
Instructions:
1. In a heatproof bowl, whisk together the egg yolks and sugar until thick and pale. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Continue whisking until the mixture reaches 160°F, about 5-7 minutes. Remove from heat and let cool slightly.
2. In a separate bowl, beat the mascarpone cheese until smooth. Gently fold in the egg yolk mixture until well combined.
3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
4. In a shallow dish, combine the espresso and rum or coffee liqueur. Dip each ladyfinger cookie into the espresso mixture and layer them in the bottom of a 9x13 inch dish.
5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
6. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
7. Before serving, dust the top of the tiramisu with cocoa powder. Enjoy!
