"Ingredients:
- 4 zucchinis
- 2 eggs
- 1/4 cup of parmesan cheese
- 1/4 cup of breadcrumbs
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of garlic powder
- 1 tablespoon of olive oil
Directions:
1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
2. Grate the zucchinis and put them in a strainer. Sprinkle the salt over the grated zucchinis and leave them for 10 minutes to remove excess water.
3. After 10 minutes, squeeze out as much water as you possibly can from the grated zucchinis.
4. In a large bowl, combine the drained zucchinis, eggs, parmesan cheese, breadcrumbs, black pepper, and garlic powder. Mix them well until all ingredients are combined.
5. Scoop about 1 tablespoon of the mixture and drop it onto the prepared baking sheet. Flatten it a bit with the back of the spoon.
6. Repeat steps with the rest of the mixture.
7. Drizzle the olive oil over the fritters.
8. Bake for 15-20 minutes or until the fritters are golden brown. Flip them halfway through baking to ensure they are evenly cooked.
9. Serve hot.
