Introducing the most delicious almond cake there is... well, at least for me. Ever since I stumbled upon this recipe somewhere on the web, whenever I have leftover egg whites, I seize the opportunity to make it. It's incredibly simple and incredibly delicious...
Almond Tart
Ingredients
For the crust:
- 200g flour
- 100g sugar
- 80g butter
- 1 egg
- 1/2 packet baking powder
- a few drops of almond extract
For the filling:
- 200g almond flour
- 200g sugar
- 4 egg whites
- a few drops of almond extract
- 100g skinless almonds
- powdered sugar for dusting
To prepare the shortcrust pastry base: Create a well with the flour mixed with baking powder, add 100g of sugar, the softened butter in small pieces, the whole egg, and the almond extract. Knead well and form the classic ball of dough to rest in the fridge for about half an hour, wrapped in plastic wrap.
Prepare the filling by mixing the almond flour with 200g of sugar, gradually adding the beaten egg whites and, finally, the drops of almond extract.
Roll out the shortcrust pastry in a 24cm baking tin, leaving a high edge. Pour in the filling, then arrange the whole almonds on the surface, lightly pressing them down. Fold the edges of the pastry.
Bake at 180 degrees Celsius for about half an hour.
Once cooled, dust with powdered sugar.
