📝 Ingredients:

For the Puffs:

  • ½ cup butter

  • Dash of salt

  • 1 cup water

  • 1 cup pastry flour

  • 4 eggs

  • 1 tbsp sugar

  • ½ tsp grated orange peel

  • ½ tsp grated lemon peel

For the Ricotta Filling:

  • 1 lb ricotta

  • 2 tbsp chocolate chips

  • 1 tbsp candied orange peel, finely chopped

  • 1 jigger crème de cacao (or liqueur of your choice)

  • 2 tbsp sugar


👩‍🍳 Instructions:

  1. Prepare the Dough: In a saucepan, bring butter, salt, and water to a boil. Add flour all at once and stir vigorously until the mixture pulls away from the sides of the pan. Let cool slightly.

  2. Add the Eggs: Beat in eggs one at a time, mixing thoroughly after each. Stir in sugar and citrus peels until well combined.

  3. Bake the Puffs: Drop dough by tablespoonfuls onto a greased baking sheet, leaving space between. Bake at 400°F (200°C) for 10 minutes, then reduce heat to 325°F (160°C) and bake 30 more minutes, or until golden brown.

  4. Make the Filling: Cream the ricotta until smooth. Add the remaining filling ingredients and mix well.

  5. Fill & Serve: Once the puffs are cool, make a slit in each and fill generously with the ricotta mixture. Dust with powdered sugar if desired.
