"Ingredients:

- 8 oz spaghetti

- 1/2 cup grated Pecorino Romano cheese

- 1/2 cup grated Parmesan cheese

- 2 tsp freshly ground black pepper

- Salt to taste


Directions:

1. Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

2. In a large skillet, toast black pepper over medium heat for 1-2 minutes.

3. Add 1/2 cup of pasta water to the skillet and bring to a simmer.

4. Add cooked spaghetti to the skillet and toss to coat in the pepper water.

5. Remove skillet from heat and add both cheeses, tossing until melted and creamy. Add more pasta water if needed to reach desired consistency.

6. Season with salt to taste and serve hot.
