"Ingredients:

- 1 can of chickpeas

- 1 can of coconut milk

- Cooked rice or quinoa for serving

- Fresh cilantro for garnish


Directions:

1. In a large skillet, sauté the onion and garlic until fragrant.

2. Add the bell pepper and cook until softened.

3. Stir in the curry powder, cumin, and turmeric.

4. Pour in the coconut milk and chickpeas, bring to a simmer.

5. Let it cook for 10-15 minutes, stirring occasionally.

6. Season with salt and pepper to taste.

7. Serve over cooked rice or quinoa, and garnish with fresh cilantro.
