"Ingredients:
- 4 large portobello mushrooms
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, diced
- 1/4 cup fresh basil, chopped
- 2 tbsp balsamic glaze
- Salt and pepper to taste
Directions:
1. Preheat oven to 400°F.
2. Remove stems from mushrooms and gently scrape out gills. Place mushrooms on a baking sheet.
3. In a bowl, combine cherry tomatoes, mozzarella, basil, salt, and pepper. Mix well.
4. Stuff each mushroom with the tomato mixture.
5. Bake for 15-20 minutes, or until mushrooms are tender and cheese is melted.
6. Drizzle balsamic glaze over the stuffed mushrooms before serving.
