"Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/4 teaspoon salt
- 1 cup cooked black beans
- 1 cup corn kernels
- 1 small red bell pepper, chopped
- 1 cup chopped fresh mango
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1/2 cup fresh lime juice
- 1/4 cup extra-virgin olive oil
- 1/4 teaspoon salt
- 1 avocado, sliced
- Lime wedges
Directions:
1. Rinse and drain the quinoa under cold water. In a medium pot, combine quinoa, water, and salt. Bring the mixture to a boil over medium-high heat, then decrease the heat to maintain a gentle simmer. Cook until the quinoa has absorbed all of the water, about 15 minutes, reducing heat as time goes on to maintain a gentle simmer. Remove from heat, cover, and let the quinoa rest for 5 minutes, which gives it time to fluff up.
2. In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, mango, cilantro, and red onion.
3. In a small bowl, whisk together lime juice, olive oil, and salt. Pour over the quinoa mixture and toss to combine.
4. Divide the mixture between 4 bowls. Top each with a few slices of avocado and serve with a lime wedge.
