Ingredients
2½ cups medium grain rice
4 medium desiree potatoes, boiled, mashed
5 eggs, lightly beaten
1 cup finely grated parmesan
1 tablespoon finely chopped parsley
2 garlic cloves, crushed
2 cups dried breadcrumbs
Vegetable oil, for deep-frying
Tomato chutney, to serve
Method
Cook rice according to packet instructions. Drain and rinse with cold water.
In a bowl, combine cooled mashed potato, rice, eggs, parmesan, parsley and garlic. Season well.
Roll mixture into 7cm-long oval-shaped croquettes. Toss in breadcrumbs.
Heat oil in a deep saucepan on high. Deep-fry croquettes for 2-3 minutes, until golden. Drain on paper towel.
Serve with tomato chutney.
