"Ingredients:
- 1 large eggplant
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves
- Olive oil
- Salt and pepper
Directions:
1. Preheat oven to 400°F.
2. Slice eggplant into 1/2 inch rounds and season with salt and pepper.
3. Dip eggplant slices in beaten eggs, then coat in a mixture of breadcrumbs and Parmesan cheese.
4. Heat olive oil in a pan and fry eggplant slices until golden brown on both sides.
5. In a baking dish, layer marinara sauce, fried eggplant slices, shredded mozzarella, and fresh basil leaves.
6. Repeat layers until all ingredients are used up, finishing with a layer of mozzarella on top.
7. Bake in the oven for 20-25 minutes, or until cheese is melted and bubbly.
