Apple bread holds a special place in my heart and is, hands down, one of my favorite sweet breads. While I also have a fondness for banana and pumpkin loaves, there's a unique charm to a generous, sweet apple bread that evokes a rush of nostalgia. Perhaps it's the reminiscent aroma of the apple orchard I frequented as a young girl, with the heavenly scents of cider and cinnamon doughnuts wafting through the air. As I grew older and started a family of my own, I continued the tradition, taking my little ones to the same apple orchard. I remember my mischievous son, around the age of three, sneakily taking bites out of apples before I could intervene. Thankfully, the owner knew us, and she always found it amusing. After acquiring our apples, we would head home to bake this delightful bread. These memories are sweet, and it's incredible how swiftly the years have passed!


For those eager to recreate this cherished recipe, you'll need the following ingredients:


- 3 cups all-purpose flour

- 1½ cups sugar

- 3 teaspoons baking powder

- ½ teaspoon salt

- ¾ teaspoon Apple Pie Spice

- 2 large eggs

- 1 cup milk

- 1 teaspoon vanilla

- 2 tablespoons softened butter

- 1½ cups peeled, chopped apples

- Oil for frying

- Confectioners sugar

Instructions:


1. Heat oil in a deep skillet or Dutch oven to 375 degrees.

2. Sift together flour, sugar, salt, and Apple Pie Spice in a large mixing bowl.

3. In a separate bowl, lightly beat eggs, then stir in milk and vanilla.

4. Make a well in the center of dry ingredients and pour in the milk mixture. Add butter and beat with a mixer on low speed for about ½ minute to moisten.

5. Scrape down the sides of the bowl and increase speed to medium for an additional 2 minutes.

6. Fold in chopped apples.

7. Using a ¼ cup measuring cup, drop batter into hot oil, being cautious not to splash yourself. If your pot is not very large, you may only cook one fritter at a time.

8. As the fritters cook, they will rise to the top. When browned on the first side, carefully turn them over with a spatula to brown the second side.

9. Drain on paper towels and immediately sprinkle generously with confectioners sugar or glaze.

10. To make the glaze, whisk together confectioners sugar and milk or water, and glaze the fritters while still warm.
